Honey Coconut Popsicles
3 small cans full-fat coconut milk
1 cup local honey
6 oz Bottle Leprechaun Golden Cider
In a medium sized pot, stir together coconut milk, Golden Cider, grated ginger, leftover nubs, and honey. Bring to a boil, then immediately reduce heat to low and let simmer for 10 minutes to let ginger oils infuse the milk.
Strain through a mesh sieve into large glassware with a lip for pouring. Distribute strained liquid evenly into popsicle molds. Freeze for 3+ hours. Enjoy.
